My Mom's Favourite Recipes

If you knew my Mom, you know she didn’t throw anything away and collected everything! She was such a force in life and most days I can’t believe she is gone except for the ache in my heart missing her physical presence. She loved to bake and make candy and she thought she made the best everything. Many of her grandchildren and great grandchildren would agree!

So here are some of the recipes I found she had collected over the years. Enjoy!



Scottish Shortbread

Ingredients:

  • 1 lb butter

  • 1 cup packed brown sugar

  • 4 to 4 1/2 cups all purpose flour

Directions:

In a mixing bowl cream the butter and brown sugar. Add 3 3/4 cups of the flour and mix well. Sprinkle a board with some of the remaining flour. Knead for 5 minutes adding enough remaining flour to make a soft, non-sticky dough.

Roll to 1/2” thickness and cut into 3” x 1” strips. Place 1” apart on ungreased baking sheets. Prick with a fork. Bake at 325 degrees for 20 to 25 minutes.

Makes 4 dozen
